Professional Cornwall-based patissier, Darryl Collins, made it through to the final rounds of Britain’s toughest baking competition Bake Off: The Professionals will be joining us in The Grand Hall and will be demonstrating the classic Eclaire, filling them, glazing and decorating. Talking about the variety of fillings such as Crème patisserie, white chocolate whip and salted caramel and he will go through the art of glazing arming you with the knowledge to make your own Eclaires after the festival.
